Aspic Jelly for Garnishing

Ingredients

Directions

Make the aspic

  1. Put the stock, free from fat, into a saucepan with the gelatine, lemon juice, bay leaf, parsley, onion, carrot, peppercorns, and Liebig extract.

  2. Add the vinegar and egg whites, then whisk together over medium heat until it boils.

  3. Reduce heat and let it simmer for 10 to 15 minutes.

Clarify and use

  1. Strain the mixture twice through a jelly bag and use as required.

What each ingredient does

Egg whites
They coagulate as they heat, trapping particles so the stock clarifies into a clear aspic.
Gelatine
Sets the cooled liquid into a firm, wobbly jelly.
Stock
Provides the liquid base and savoury flavour that the jelly is built from.
Lemon juice
Adds acidity that brightens the flavour of the savoury stock.

The step that matters

Simmering after the egg whites are added. Egg whites must be brought up gently with the stock. If it boils hard or is stirred too vigorously, the coagulated whites break apart and cloud the liquid, so the clarification fails.

Swap the mace

Fit is the average pairing score against onion, carrot, lemon, vinegar, tarragon, clove, parsley. Candidates are from the same food group and used in at least 100 recipes.
