Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shin of beef
Releases collagen and gelatine into the stock, giving the aspic body and a rich savoury flavour.
Gelatine
Sets the cooled liquid into a firm, sliceable jelly.
Poultry trimmings
Add extra collagen and savoury depth to the stock.

The step that matters

Skimming the stock. Skimming removes coagulated proteins and fat as the liquid heats, keeping the stock clear and preventing a cloudy, greasy aspic.

Swap the clove

How well each one fits the dish's main ingredients (beef, carrot, onion, shallot):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits better
  4. Clovethe original

Fit is the average pairing score against beef, carrot, onion, shallot. Candidates are from the same food group and used in at least 100 recipes.
