White Mushroom Sauce

Ingredients

Directions

Prepare the mushrooms

  1. Prepare the mushrooms by cleaning them and soaking in lemon juice and water to whiten.

  2. Cut the mushrooms into small pieces.

Make the sauce

  1. In a saucepan, melt the butter and add the mushrooms until they are soft.

  2. Stir in the Bechamel sauce and simmer for 5 to 6 minutes until done, but do not overcook to maintain color.

  3. Rub the mixture through a fine sieve, reheat in a bain-marie, and serve with boiled chicken, turkey, or any white entrée.

  4. For a richer sauce, add 1 pint of cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Button mushrooms
Provide the main body and earthy flavor of the sauce once softened and sieved.
Bechamel or allemande sauce
Forms the creamy base that gives the sauce its body and smooth texture.
Butter
Softens the mushrooms in fat and adds richness and a rounded flavor.
Lemon juice
Acidity that helps keep the mushrooms pale during soaking.

The step that matters

Avoid overcooking after adding the Bechamel. Extended simmering can darken the mushrooms and thicken the sauce too much, dulling its white color and smooth texture.
