Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Partridge or game carcasses
Provide the main meaty flavour and body to the stock.
Butter and flour
Form a roux that thickens the strained stock into a smooth sauce.
Claret
Adds acidity and depth of flavour to the stock.
Lean ham
Adds savoury, salty depth to the stock.
Lemon juice
Adds brightness and acidity to balance the rich sauce.

The step that matters

Pouring the stock into the roux. Adding the liquid a little at a time while stirring constantly keeps the flour smooth, so lumps do not form and the sauce thickens evenly.
