Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the macaroni in salted water until cooked, then pour in cold water and drain immediately.

  2. In a saucepan, blend a little flour into the milk or cream, then add ¼ ounce of butter, parsley, onion, pepper, salt, and nutmeg.

Make the sauce

  1. Cook the sauce over low heat until thick, then strain through a fine sieve.

Bake and serve

  1. Stir the sauce into the drained macaroni along with most of the cheese and the butter.

  2. Transfer the mixture to a buttered baking dish, sprinkle with remaining cheese and a little hot butter on top.

  3. Bake at 400°F (200°C) until golden brown.

What each ingredient does

Macaroni
Forms the bulk of the dish and holds the sauce in its hollows and tubes.
Milk or cream
Forms the liquid base of the sauce, which thickens as it cooks.
Parmesan cheese
Adds savoury flavour and browns on the surface when baked.
Gruyere cheese
Melts into the sauce for a creamy texture and stringy body with a nutty flavour.

The step that matters

Cook the sauce over low heat until thick. Flour thickens milk as its starch swells with heat, but high heat can scorch the milk on the pan base or cause lumps. Gentle heat with steady stirring gives a smooth, even sauce.
