Vanilla Tartlets

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Pound the Jordan almonds until smooth.

  2. Add the caster sugar and continue to pound.

  3. Whip the egg whites and flavor with essence of vanilla.

  4. Combine the almond mixture with the whipped egg whites.

Fill and bake

  1. Line patty pans with pastry and fill with the mixture.

  2. Sprinkle a little more sugar on top.

  3. Bake in a moderate oven at 350°F (175°C) until cooked.

Serve

  1. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Jordan almonds
Provide the main body and nutty almond flavor of the filling.
Caster sugar
Adds sweetness and helps the almonds blend into a smooth paste.
Egg whites
Whipped to air, they lighten the filling and help it set when baked.

The step that matters

Whip the egg whites and fold them into the almond mixture. Whipped egg whites trap air that gives the filling its lightness. Folding gently keeps that air in, so the tartlets rise and set softly rather than turning dense.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits less well
  4. Macadamia nutfits less well

Fit is the average pairing score against sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
