Hard Sauce

Ingredients

Directions

Make the sauce

  1. In a bowl, combine sugar and butter. Beat until creamy, keeping the butter cool to prevent oiling.

  2. Whip the egg white to stiff peaks and gently fold it into the sugar and butter mixture.

Serve

  1. Transfer the sauce to a crystal dish and grate nutmeg over the top before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sauce and helps it cream smoothly with the butter.
Butter
Provides fat and body, creaming with sugar to form the sauce's base texture.
Egg white
Whipped to stiff peaks, it lightens the sauce and adds airy structure.

The step that matters

Keeping the butter cool. If the butter gets too warm while beating, it can separate and oil out instead of forming a smooth, creamy emulsion with the sugar.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, butter, egg):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against sugar, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
