Rice Cream

Ingredients

Directions

  1. Melt the gelatine over low heat and pour it into the vanilla cream carefully.

  2. Whip the egg white to stiff peaks and gently fold it into the cream without deflating.

  3. Split the ladyfingers and cut them to fit a pint soufflé tin, placing them upright around the edges.

  4. Skewer the cherries, dip them in cold water, and arrange them fancifully at the bottom of the tin.

  5. Once the cream begins to thicken, pour it into the mold carefully to avoid disturbing the ladyfingers.

  6. Refrigerate until firm, then carefully turn out onto a dessert dish, ensuring the shape and cherries remain intact.
