Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish, giving it a soft, rich texture when cooked.
Bacon
Adds fat and savory flavor that carries through the liver mixture.
Egg yolks
Bind the mixture and help it set into a cohesive, smooth texture when heated.
Cream
Adds moisture and richness, softening the texture of the liver mixture.

The step that matters

Heat over low heat, stirring until very hot. Egg yolks in the mixture can curdle or turn grainy if heated too fast or left unstirred. Gentle, constant stirring over low heat lets the yolks thicken the mixture evenly.
