Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Haddock on Toast

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Scald the haddock, place it on a baking sheet, and spread 1 oz of butter over it.

  2. Cook in a 400°F (200°C) oven for 10 to 15 minutes.

  3. Remove the flesh from the bones and skin, then chop it finely.

  4. Add pepper and salt to taste.

  5. Melt the remaining 1 oz of butter in a saucepan and lightly fry the haddock.

  6. Cut the slices of bread into shapes and fry them.

  7. Top each piece of bread with a little haddock, then decorate with chopped boiled egg and parsley.

  8. Cut the toast into rounds, spread a little butter on each round.

  9. Wash and dry the anchovies, fold them, and place one on each round of toast.

  10. Chop the egg white and rub the yolk through a sieve.

  11. On each anchovy, add a little chopped egg white, then a bit of yolk.

  12. Sprinkle with chopped parsley and serve cold.
