What each ingredient does

Neck of mutton
Provides the main meat flavour and gelatin that gives the broth body as it simmers.
Rice
Thickens the broth slightly as its starch releases during boiling.
Onions
Add savoury sweetness and aroma to the broth base.
Carrot
Adds gentle sweetness and colour to the broth.
Turnip
Adds mild sweetness and body to the broth.

The step that matters

Removing the scum after the water boils. Scum is coagulated protein and impurities that rise from the meat as it heats. Skimming it early keeps the broth clear and free of bitter, muddy flavours.
