Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Cornish Pasties

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Roll out the pastry to ¼ inch thick and cut into large rounds with a round cutter.

Make the filling

  1. Cut the meat and potatoes into small dice, season with salt and pepper, and mix with the chopped onion.

  2. Place equal amounts of the mixture in the center of each pastry round.

Shape and bake

  1. Wet the edges of the pastry, fold it over to enclose the filling, and crimp the edges to seal.

  2. Brush the pasties with beaten egg and place them on a greased baking sheet.

  3. Bake in a moderate oven at 350°F (175°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Plain short pastry
Forms an enclosing crust that holds the filling and bakes into a crisp, golden shell.
Beef steak
Provides the main filling, cooking through as the pasty bakes to become tender and savory.
Potatoes
Add bulk and moisture to the filling, cooking through in the enclosed pastry.
Onion
Adds aroma and sweetness as it softens and flavors the filling during baking.

The step that matters

Crimping the edges to seal. If the edges are not wetted and firmly crimped, the pastry can open during baking, letting juices escape and leaving the filling dry and the crust underbaked.

Swap the onion

How well each one fits the dish's main ingredients (beef, potato, pepper):

  1. Capsicumfits about as well
  2. Tomatofits about as well
  3. Carrotfits about as well
