Strawberry Cakes

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter in a bowl.

  2. Add the sugar and Coombs’ Flour, moistening gradually with the yolks of the eggs.

  3. Fold in the stiffly beaten egg whites.

  4. Add the strawberry essence and stir in the blanc-mange powder lightly.

Bake

  1. Bake in small greased tins for about 10 minutes at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks moisten the batter and whites, beaten stiff and folded in, give the cake lightness.
Butter
Creaming with sugar traps air and adds richness and a tender crumb.
Coombs’ flour
Provides the structure that holds the cake together as it bakes.
Bird’s strawberry blanc-mange powder
Adds strawberry flavour and sweetness, and helps set the cake's texture.

The step that matters

Folding in the stiffly beaten egg whites. Egg whites hold air only when beaten stiff and kept intact. Overmixing or stirring them vigorously deflates the foam, so the cake rises less and bakes up dense. Fold gently, just until combined.

Swap the strawberry

How well each one fits the dish's main ingredients (flour, sugar, butter, egg):
