Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the icing

  1. Mix the ground almonds and caster sugar together well.

  2. Beat in the egg yolk and egg whites until you have a stiff paste.

  3. Add the almond flavoring.

Finish and dry

  1. Dip a broad knife in hot water to smooth the icing on top of the cake.

  2. Place the cake in a cool oven at 300°F (150°C) until the icing is firm and dry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground almonds
Provide the bulk and nutty flavor that make up the icing paste.
Castor sugar
Adds sweetness and helps the icing set firm and dry when baked.
Egg yolk
Adds richness and helps bind the almonds into a smooth paste.
Egg whites
Give the paste structure so it holds a stiff, spreadable shape.

The step that matters

Place the cake in a cool oven until the icing is firm and dry. A cool oven dries the icing gently without browning it. Too high a heat can colour or puff the surface before it is set through.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
