Beep Tea

Ingredients

Directions

Prepare

  1. Remove all fat and skin from the beef and mince it very finely.

  2. Place the minced beef in a jar with a pinch of salt and the cold water.

  3. Allow it to stand for an hour or longer.

Cook and strain

  1. Cover the jar closely and place it in a saucepan of boiling water, ensuring the water comes halfway up the jar.

  2. Let it simmer gently for one hour, avoiding overcooking.

  3. Strain the tea from the meat through a coarse strainer and carefully remove any fat.

What each ingredient does

Ground beef
Provides the meat flavour and the dissolved protein and juices that make the tea savoury.
Water
Extracts the flavour and soluble compounds from the minced beef as it stands and simmers.

The step that matters

Simmer gently in a water bath. Keeping the jar in gently simmering water, not a hard boil, extracts flavour while keeping the liquid clear. Overcooking toughens the meat and makes the tea cloudy and greasy.
