What each ingredient does

Strawberries
Provide the fruit flavor and the bulk of the jam.
White sugar
Sweetens the jam and helps it set and keep well.

The step that matters

Adding the hot sugar to the fruit. Sugar dissolved into hot fruit helps the jam thicken as it boils. Adding cold or unheated sugar can slow dissolving and cool the mixture, so stirring well keeps the sugar evenly distributed.
