Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Melts and caramelizes to form the brittle, sweet toffee base.
Almonds
Add crunch and a toasted, nutty flavor as the mixture browns.
Butter
Adds richness and a smooth texture to the cooked sugar.

The step that matters

Stir continuously until golden brown. Sugar can go from golden to burnt within seconds once it darkens. Constant stirring keeps the heat even so the caramel browns evenly without scorching, which would make the toffee bitter.
