To Make Dutch-beef

Ingredients

Directions

  1. Rub the beef all over with brown sugar and let it sit in a pan for 2-3 hours, turning it 3-4 times.

  2. Salt the beef well with coarse sea salt and saltpetre, then let it sit for a fortnight, turning it daily.

  3. Roll the beef tightly in a coarse cloth and place it in a cheese press for 24 hours.

  4. Hang the beef to dry in a chimney.

  5. When boiling, place the beef in a cloth. Once cold, it will cut into shivers like Dutch-beef.
