Artichokes a LA Proventpale

Ingredients

Directions

Prepare

  1. Remove all coarse leaves from the artichokes and cut away the bottoms, snipping off the hard parts of the leaves.

  2. Salt and pepper the inside of the artichokes, then pour olive oil freely over them.

Stew

  1. Place the artichokes in a stewpan, pouring oil up to their chokes.

  2. Add a few sprigs of parsley and thyme.

  3. Cover the stewpan with a dish or soup plate filled with water.

  4. Stew the artichokes for two hours over low heat and serve in their own sauce.

What each ingredient does

Tender artichokes
The main vegetable; its tender flesh becomes soft and creamy during slow stewing.
Olive oil
Adds moisture and richness, and carries heat evenly so the artichokes cook gently without drying.
Fresh thyme sprigs
Contributes an herbal aroma that infuses the oil and cooking liquid.

The step that matters

Stew gently over low heat under the water-filled cover. The weighted cover traps steam so the artichokes cook in their own oil and juices. Higher heat can scorch the oil and dry the leaves before the hearts turn tender.

Swap the parsley
