What each ingredient does

Cream
Whipped into a stiff foam that gives the dessert its light, airy body.
Castor sugar
Sweetens the cream and helps stabilise the whipped foam as it is added gradually.
Mixed nuts
Add texture and nutty flavour through the chopped pieces folded into the cream.
Maraschino
Adds a sweet, cherry-like aroma and flavour when added slowly to the cream.

The step that matters

Adding the maraschino drop by drop. Liquid added quickly to whipped cream can break down the foam and make it watery. Adding it slowly and mixing gently keeps the cream thick and light.
