Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Slice a round piece off the top of each tomato and scoop out the inside.

  2. Melt 1 tablespoon of butter in a saucepan, then add the tomato pulp, ½ ounce of breadcrumbs, onion, mushrooms, parsley, salt, and pepper. Stir the mixture.

Fill and bake

  1. Fill the tomatoes with the mixture.

  2. Top each filled tomato with a small piece of butter and some breadcrumbs.

  3. Arrange the tomatoes on a hot dish and bake at 400°F (200°C) for 15 minutes.

  4. Serve on small squares of buttered toast.

Butter
Adds richness and moisture, and helps the top brown lightly in the oven.
Breadcrumbs
Absorb juices from the pulp and mushrooms, giving the filling body and a lightly crisp top.
Mushrooms
Add savoury depth and moisture to the filling.
