Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid body of the cream and carries the flavour of the vanilla.
Cream
Adds richness and fat, giving a smooth, soft texture once whipped in.
Caster sugar
Sweetens the cream and helps stabilise the whipped cream.
Eggs
Yolks enrich and thicken the custard, while whites add lightness to the set cream.
Isinglass
Gelatine-like setting agent that firms the cream as it chills.
Vanilla pod
Provides the aroma of the dish, infused into the milk while simmering.

The step that matters

Beating the mixture until cold. Folding the cream and eggs into the mixture must be done while it is cooling but not yet set, so the whipped cream and egg whites stay airy and do not collapse. Beating too late can leave lumps or a dense texture, and too little cooling can cause the egg to scramble over the heat.
