Victoria Sandwich

Oven, in the book's wordsA fairly quick oven

Ingredients

Directions

The book says “a fairly quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together.

  2. Add each egg separately, mixing well after each addition.

  3. Gradually mix in both flours while beating the mixture.

  4. Pour the batter into two well-greased sandwich tins of the same size.

Bake and assemble

  1. Bake in a preheated oven at 400°F (200°C) for 10 to 12 minutes.

  2. Once cooled, spread jam on one layer and place the other layer on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Builds the structure of the sponge so it holds its shape when baked.
Eggs
Add structure and lift, helping the batter rise and set as it bakes.
Butter
Adds richness and a tender texture to the crumb.
Castor sugar
Sweetens the sponge and helps trap air when creamed with butter.

The step that matters

Creaming the butter and sugar. Beating them together traps air in the fat, which gives the batter lift. If the butter is too cold or the mixing is too short, the sponge can turn out dense.
