Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides meaty flavour and body as it browns and simmers into the gravy.
All-purpose flour
Coats the beef and thickens the liquid while it cooks and browns.
Butter
Carries the browning of the beef and adds richness to the gravy.
Toasted bread crust
Adds toasted, roasted aroma and some body to the simmering liquid.

The step that matters

Fry the beef until browned on all sides. Browning creates Maillard flavour compounds that give the gravy its deep, savoury taste. Pale beef yields a flatter, weaker-tasting gravy.

Swap the mace

How well each one fits the dish's main ingredients (beef, flour, butter, clove, carrot, bread):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against beef, flour, butter, clove, carrot, bread. Candidates are from the same food group and used in at least 100 recipes.
