Raspberry Jam

Ingredients

Directions

Cook the jam

  1. Bruise the raspberries well and mix with currant jelly in a pot.

  2. Set over low heat, stirring constantly until it boils.

  3. Let it boil gently for 30 minutes, stirring often to prevent sticking.

Jar and store

  1. Pour into jars and seal with paper as you would currant jelly.

  2. Store in a cool, dry place; it will keep for 2-3 years.

Currant and sugar barely smell alike, yet cooks put them together in 12,256 recipes: they work on texture and structure more than aroma.

What each ingredient does

Raspberries
Provide the main fruit flavour, colour and bulk of the jam.
Currant jelly
Adds pectin and tartness that help the jam set.
Single refined sugar
Sweetens the jam and helps it set and keep.

The step that matters

Boil gently while stirring often. Sugar-rich fruit scorches on the base of the pot when heated unevenly or left unstirred, which gives a burnt taste. A gentle boil with frequent stirring keeps the jam even and prevents sticking.
