Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Stewed Carp

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

  1. Remove the bones from the carp and cut it into pieces if large, or split if small.

  2. In a pan, melt a bit of butter and add lemon juice, then lightly fry the fish.

  3. Spread stuffing over each piece of fish, roll them up, and secure with small skewers.

  4. Place the rolls in a small earthen pan, beat the egg, and brush it over the rolls.

  5. Sprinkle bread crumbs on top, then add meat gravy, caper liquor, chopped anchovy, and parsley to the bottom of the pan.

  6. Cover the pan and bake in a slow oven (300°F / 150°C) until the fish is cooked through.

  7. Serve the rolls on a dish, keeping them warm until the gravy is skimmed. If needed, prepare additional flavored gravy to add.
