Lemonade

Ingredients

Directions

  1. Pare the lemons according to the quantity needed.

  2. Pour hot water over the peels and set aside.

  3. In a saucepan, combine sugar and water to make a syrup, adding the whipped egg white.

  4. Bring the mixture to a boil, then add a little cold water.

  5. Once it boils again, remove from heat and let it settle.

  6. Skim off any foam and pour the clear syrup into the infused water with the lemon juice.

  7. Stir and taste, adding more water if necessary to achieve a rich lemonade.

  8. Wet a jelly bag, squeeze it dry, and strain the mixture through it.
