To Keep Gooseberries
Ingredients
Directions
Gather gooseberries before they become too large, ensuring not to cut the stalks and buds.
Fill wide-mouthed bottles with the gooseberries and place the corks loosely in.
Submerge the bottles up to the neck in boiling water until the fruit looks scalded.
Remove the bottles and let them cool completely before corking tightly and sealing with rosin.
Dig a trench in a less-used part of the garden deep enough to stand the bottles, covering them with a foot and a half of earth.
In frost, add fresh stable litter to prevent the ground from hardening.
