What each ingredient does

Green turk cucumbers
Form the main body of the pickle, taking up the syrup as they cook.
Refined sugar
Provides sweetness and, as a thick syrup, preserves and glazes the cucumbers.
Coarse sea salt
Draws out water and firms the cucumbers before the soaking step.
White ginger
Adds aromatic, warm flavor to the syrup.

The step that matters

Removing the salt by soaking. Soaking must run long enough to pull out the salt, since leftover salt will make the pickle harsh and overly salty. Changing the water helps the salt diffuse out of the cucumbers.

Swap the cabbage

How well each one fits the dish's main ingredients (cucumber, sugar, lemon, ginger):

  1. Broccolifits better
  2. Radishfits better
  3. Arrowrootfits better
  4. Cabbagethe original

Fit is the average pairing score against cucumber, sugar, lemon, ginger. Candidates are from the same food group and used in at least 100 recipes.
