What each ingredient does

Milk
Forms the curd and provides the body of the cheese.
Rennet
Enzymes that set the milk into a firm curd.
Young red sage
Adds herbal aroma and flavor, and tints the milk.
Spinach leaves
Adds green color and a mild vegetable flavor to the cheese.

The step that matters

Break the curd gently. Curd that is broken roughly shatters into small pieces and loses excess whey, which dries the cheese. Gentle handling keeps more moisture and a softer, even texture.

Swap the sage

How well each one fits the dish's main ingredients (spinach, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Cuminfits better
  4. Sagethe original

Fit is the average pairing score against spinach, milk. Candidates are from the same food group and used in at least 100 recipes.
