Savoury Salt Beef Baked

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the cure

  1. Hang the beef for 2-3 days.

  2. Pound together saltpetre, sugar, black pepper, allspice, ginger, herbs, and common salt.

  3. Remove the bone and rub the meat with the mixture, turning and rubbing daily for 14 days.

Bake and serve

  1. When ready to cook, place the meat in a pan with water.

  2. Cover the meat with shredded mutton suet and minced onions.

  3. Cover the pan with a flour crust to the brim.

  4. Bake in a moderate oven at 350°F (175°C) for about 6 hours, or stew gently for 5 hours.

  5. Garnish with finely chopped parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Saltpetre
Cures the meat and helps keep its colour pink while it is salted.
Common salt
Draws moisture out of the meat and seasons it during the long cure.
Coarse sugar
Balances the salt and adds mild sweetness to the cured meat.
Mutton suet
Adds fat that bastes the meat and keeps it moist during the long cooking.
Flour crust (in the method)
Seals the pan so the meat cooks in its own steam and juices.

The step that matters

Long cure with daily turning. The beef must be rubbed and turned every day for the full 14 days so the salt and saltpetre penetrate evenly. Skipping days leaves uneven curing and patchy seasoning.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (beef, sugar, pepper, allspice, mutton, onion, parsley):

  1. Thymefits better
  2. Marjoramfits better
  3. Clovefits better
  4. Gingerthe original

Fit is the average pairing score against beef, sugar, pepper, allspice, mutton, onion, parsley. Candidates are from the same food group and used in at least 100 recipes.
