What each ingredient does

Pearl barley
Provides the starch and body that give the drink its mild, cloudy texture.
Figs
Add natural sweetness and a soft, fruity flavour to the liquid.
Raisins
Add sweetness and a rounded, fruity depth to the liquid.
Liquorice
Adds a distinctive sweet, aniseed-like aroma and flavour.

The step that matters

Boiling down to 2 pints, then to 1 quart. Reducing by boiling concentrates the flavour and the starch from the barley. Stopping at the stated volumes keeps the drink from becoming too thick or too weak.
