Rich Puff Paste

Ingredients

Directions

  1. Weigh equal amounts of butter and fine flour.

  2. Mix a little butter with the flour and add just enough water to form a stiff paste.

  3. Roll out the paste and layer slices of butter on top.

  4. Fold the ends in and roll thin; repeat this process twice.

  5. For a less rich paste, rub together 1 pound of flour and 1/4 pound of butter.

  6. Mix with a little water and an egg until it forms a paste.

  7. Roll and fold the paste three to four times.

  8. Combine 1 pound of dried flour, 6 ounces of butter, and 1 tablespoon of sugar.

  9. Work into a stiff paste with minimal hot water.
