What each ingredient does

Oranges
Their peel and juice supply the aroma and bright citrus flavour.
Lemons
Their juice adds acidity that balances the sweetness of the sugar.
Sugar
Sweetens the punch and helps draw flavour out of the peels.
Milk
Hot milk curdles with the acid and, once strained, leaves the punch clear and mellow.
Rum or brandy
Carries the citrus aroma and flavour and acts as the spirit base of the punch.

The step that matters

Strain through a jelly bag until clear. Milk curdles when it meets the citrus acid, and the curds must be fully filtered out. Rushing the straining leaves cloudy punch with solids in it.
