Why it works: Nutmeg and orange match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 2,746 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Press the curd in a napkin to absorb excess moisture.

  2. Pound the curd thoroughly in a mortar.

  3. Mix in the remaining ingredients until a soft paste forms.

Fill and bake

  1. Line tartlet pans with puff pastry trimmings.

  2. Fill the pans with the cheese mixture and garnish with a strip of candied peel.

  3. Place on a baking sheet and bake in a 350°F (175°C) oven until light brown.

Serve

  1. Sprinkle with sifted sugar and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pressed curd
Forms the body of the filling, setting firm and creamy as it bakes.
Egg yolks
Bind the mixture and help it set into a soft, custard-like texture.
Sugar
Sweetens the filling and helps it brown lightly in the oven.
Butter
Adds fat for richness and a smoother, more tender texture.
Ratafias
Add almond-like aroma and a crisp, flavourful crumb to the filling.

The step that matters

Pressing the curd. Excess whey moisture left in the curd can make the filling watery and stop it setting smoothly, so the curd should be well pressed before pounding and mixing.

Swap the orange

How well each one fits the dish's main ingredients (sugar, butter, egg, nutmeg):

  1. Vanillafits better
  2. Lemonfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against sugar, butter, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
