Minced Veal

Ingredients

Directions

  1. Cut the cold veal into small slices, trimming off fat, gristle, and brown parts.

  2. If you don't have stock, break up veal bones and trimmings in a stewpan, cover with water, and season with pepper, salt, bouquet garni, mace, and peppercorns. Add lemon peel, carrot, and onion if desired.

  3. Simmer the stock for 2-3 hours, strain, cool, and remove fat.

  4. Melt butter in a stewpan, stir in flour, add stock, boil, and skim if necessary.

  5. Let the mixture cool slightly, then stir in the veal and simmer gently to warm through.

  6. Add cream if desired and serve with toasted or fried bread.
