  3. Stir in 2 tablespoons of sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Starch that softens during boiling and thickens the milk into a pudding body.
Milk
Liquid that the rice absorbs and cooks in, forming the creamy base.
Eggs
Set during baking to bind the pudding into a sliceable custard-like texture.
Sugar
Adds sweetness and helps give the baked surface a light browning.

The step that matters

Let the mixture cool before adding the eggs. Eggs scrambled by hot mixture will curdle and lose smoothness. Cooling the rice pudding first lets the eggs blend in evenly and set gently in the oven.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, sugar, egg):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Turmericfits less well
  4. Gingerfits less well

Fit is the average pairing score against rice, milk, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
