Roast Leg of Mutton
Ingredients
Directions
Prepare
Keep the leg of mutton in a dry, airy place for a few days before roasting.
Saw off the shank-bone two inches below the knuckle.
If desired, insert a clove of garlic near the knuckle.
Roast
Place the mutton before a sharp fire for 15 minutes to seal in the juices.
Move the mutton a short distance away from the fire to finish roasting.
Add ½ pint of broth to the dripping pan.
Sprinkle the mutton with coarse sea salt 5-10 minutes before removing from the fire.
Serve
Transfer the mutton to a dish and place a white paper frill around the knuckle-bone.
Skim off the fat and strain the gravy over the meat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Leg of mutton
- Is the main cut of meat, providing the flavour and the bulk of the dish.
- Broth
- Moistens the pan and dissolves the drippings into a gravy base.
The step that matters
Searing over a sharp fire. A short blast of high heat browns the surface and helps seal in juices. Moving the meat to gentler heat afterward lets the centre cook through without drying the outside.
Swap the clove
The recipe marks clove as optional. How well each one fits the dish's main ingredients (mutton, garlic):
- Cuminfits better
- Pepperfits better
- Parsleyfits better
- Clovethe original
Fit is the average pairing score against mutton, garlic. Candidates are from the same food group and used in at least 100 recipes.
