What each ingredient does

Lamb breast
Provides the rich meat and fat that renders and flavours the dish while roasting.
Stale bread crumbs
Absorb melting fat and form a crisp, browned crust on the surface.
Minced parsley
Adds fresh, green aroma that brightens the rich crumb coating.

The step that matters

Sprinkling the crumb mixture after about 15 minutes. Add it only once the fat has begun to melt. Too early and the crumbs soak up fat and burn before the surface crisps; too late and the crust will not brown well.

Swap the mint

How well each one fits the dish's main ingredients (lamb, bread, parsley, pepper, watercress, sauce):
