What each ingredient does

Leg of mutton
Provides the main protein, which firms and becomes tender as it simmers gently in water.
Boiled turnips
Add mild sweetness and a soft texture that balances the rich, savoury meat.
Caper sauce
Adds acidity and sharp saltiness that cut through the richness of the mutton.

The step that matters

Simmering the mutton for 2 hours. Gentle simmering lets collagen and connective tissue break down slowly, making the meat tender. A hard boil toughens the muscle fibres and can leave the outside overcooked before the centre is done.

Swap the turnip

How well each one fits the dish's main ingredients (mutton, sauce):

  1. Shallotfits better
  2. Tomatofits better
  3. Onionfits about as well
  4. Turnipthe original

Fit is the average pairing score against mutton, sauce. Candidates are from the same food group and used in at least 100 recipes.
