Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Preserve Cucumbers

Ingredients

Directions

Prepare the cucumbers

  1. Cut cucumbers into pieces and some small ones whole; place them in brine in a jar, covering with cabbage leaves.

  2. Simmer cucumbers in water with a little coarse sea salt until tender.

  3. Remove seeds and soak cucumbers in cold water for 2-3 days to remove salt.

Make the syrup

  1. Make a syrup with 1 pound of refined sugar and ½ cup spring water; boil and skim.

  2. Add lemon rind and white ginger to the syrup and boil until thick.

Cook and repeat

  1. Let syrup cool, then add cleaned cucumbers. Boil them and repeat boiling every 3 days for about 2 weeks.

What each ingredient does

Green turk cucumbers
Provide the main body and crisp texture of the pickles.
Refined sugar
Sweetens the pickles and helps preserve them in the thick syrup.
Coarse sea salt
Draws out water and firms the cucumbers during the initial cooking and soaking.
White ginger
Adds a warm, aromatic flavour to the syrup.
Lemon rind
Adds aromatic citrus oil and brightness to the syrup.

The step that matters

Removing the salt by soaking. Soaking for the full 2-3 days in cold water draws out the salt absorbed during brining and simmering. Skipping or shortening this leaves the pickles too salty, and the sugar syrup cannot correct that balance.

Swap the cabbage

How well each one fits the dish's main ingredients (cucumber, sugar, lemon, ginger):

  1. Broccolifits better
  2. Radishfits better
  3. Arrowrootfits better
  4. Cabbagethe original

Fit is the average pairing score against cucumber, sugar, lemon, ginger. Candidates are from the same food group and used in at least 100 recipes.
