What each ingredient does

Lobster
Provides the main meat and spawn, giving the sauce its flavour and body.
Butter
Adds richness and fat, carrying flavour and giving the sauce a smooth mouthfeel.
Flour
Thickens the sauce as it heats, giving it body.
Lemon
Adds acidity that brightens the rich flavours of the sauce.
Gravy
Adds savoury depth and moisture to the sauce.

The step that matters

Gently boil the mixture for 6-7 minutes. Flour thickens only as its starch swells in simmering liquid. Boiling too hard can break the butter emulsion and toughen the delicate lobster meat, so keep the heat gentle.

Swap the mace

How well each one fits the dish's main ingredients (lobster, butter, anchovy, ketchup, horseradish, lemon, flour):

  1. Capersfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against lobster, butter, anchovy, ketchup, horseradish, lemon, flour. Candidates are from the same food group and used in at least 100 recipes.
