What each ingredient does

Veal
Is the main protein; cooking it in hot butter browns its surface and sets its texture.
Egg yolk
Binds the bread crumb coating so it adheres to the veal during frying.
Bread crumbs
Form a crisp, golden coating that browns in the hot butter.
Fresh butter
Conducts heat for frying and adds richness and browning flavour.
Flour
Thickens the pan juices and butter into a gravy.

The step that matters

Fry the veal pieces in the hot butter until golden brown. The butter must be hot enough to brown the coating quickly. If it is too cool, the crumbs absorb fat and turn greasy and pale, and the veal may release juices and steam instead of crisping.
