Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Neck of mutton
Provides the meat and rich flavour that the broth is built on.
Turnips
Add sweetness and a mild vegetable flavour to the broth.
Onion
Adds savoury depth and aroma as it simmers in the broth.
Barley or rice
Optional; releases starch that gives the broth more body.

The step that matters

Skim the broth well. Fat and foam rise to the surface as the meat simmers. Removing them early keeps the broth clear and stops it tasting greasy.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mutton, onion, bread, turnip, chive, parsley, barley):

  1. Capersfits better
  2. Thymefits better
  3. Garlicfits better
  4. Macethe original
