What each ingredient does

Beef leg
Releases flavor and gelatin into the water as it simmers, giving the broth body.
Barley
Absorbs liquid and swells during simmering, adding chewy texture and thickening the broth.
Celery
Contributes aromatic, savory flavor as it softens in the broth.
Onion
Adds sweetness and savory depth as it cooks down into the broth.

The step that matters

Reducing the broth by half. Boiling concentrates the flavor of the beef and vegetables, but the liquid must be watched so it does not evaporate too far before the barley is added and cooked for an hour.
