Why it works: Radish and horseradish share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 38 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Radish Pods

Ingredients

Directions

  1. Soak the young radish pods in salt and water overnight.

  2. Boil the salt and water, then pour it over the pods and cover the jar to trap steam.

  3. When the mixture is cool, heat it until boiling and pour it over the pods again. Repeat until the pods are bright green.

  4. Drain the pods in a sieve.

  5. Prepare a pickle with white vinegar, mace, ginger, long pepper, and horseradish.

  6. Pour the boiling hot pickle over the pods, then heat the vinegar again and pour it over the pods once more.

  7. Seal the jar tightly and store for later use.
