Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Button mushrooms
Form the main body of the pickle, softening and absorbing the flavoured liquid as they are cooked.
Vinegar
Provides the acidity that preserves the mushrooms and gives the pickle its sharp flavour.
Mace
Adds a warm, aromatic spice flavour to the mushrooms.

The step that matters

Shaking the mushrooms until the liquid is reabsorbed. Salt draws water out of the mushrooms, so they release liquid at first. Continued shaking lets the mushrooms take that liquid back in, which seasons them evenly. Stopping early leaves the pickle watery and unevenly salted.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, pepper, vinegar):

  1. Thymefits better
  2. Tarragonfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against mushroom, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
