To Preserve Gooseberries Green
Ingredients
Directions
Prepare the gooseberries by making a slight opening at the small end.
Scald water until hot, then add the gooseberries and cover them with white paper.
Let the gooseberries sit in the hot water for two days.
Transfer the gooseberries to a preserving pan and cover them with clarified sugar.
Let them sit for four to five days.
Boil the gooseberries gently on the fire.
The next day, drain the gooseberries from the sugar.
Boil the sugar until it reaches the 'blowing' stage, adding enough to cover the gooseberries.
Store the gooseberries in a jar for immediate use.
