What each ingredient does

Clarified sugar
Forms the syrup that preserves the cherries and gives them sweetness.
Morilla cherries
Provide the fruit, which softens and absorbs syrup during the boil and rest.

The step that matters

Letting the cherries sit overnight. Resting the fruit in concentrated sugar draws water out by osmosis, so the cherries firm and the syrup thickens before the second boil. Skipping or shortening the rest can leave the fruit soft and the preserve runny.
