Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

French beans
Form the main body of the dish and carry the sauce.
Butter
Adds richness and body to the sauce, with flour helping it thicken.
White wine
Adds acidity and depth of flavour to the sauce.
Ketchup
Adds sweetness and tang to the sauce.
Mushroom pickle
Adds savoury, umami-rich flavour to the sauce.

The step that matters

Frying the beans until brown. Drying the beans well before frying lets their surface brown rather than steam. Browning builds savoury flavour through the Maillard reaction, and wet beans would stay pale and soft.

Swap the mace

How well each one fits the dish's main ingredients (beans, butter, ketchup, mushroom, white wine, onion, clove):

  1. Thymefits better
  2. Garlicfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against beans, butter, ketchup, mushroom, white wine, onion, clove. Candidates are from the same food group and used in at least 100 recipes.
